Cherry Filling:
1 cup dried sour cherries, soaked in hot water
1 1/2 cups dried cranberries, soaked in hot water
2 cups desiccated coconut
1/3 cup melted coconut oil
2 tbsp rice malt syrup
1/4 tsp salt
Chocolate Coating:
1/2 cup maple syrup
1/2 cup cacao powder
pinch of salt
How To Make It :
1. Drain the berries from the hot water and blend the cherry filling ingredients in a high powered food processor until it combines together into a sticky dough. Press evenly into a lined 10x20cm loaf tin. Freeze for 5-6 hours.
2. Prepare the chocolate coating by whisking together the ingredients with a fork/whisk until smooth.
3. Remove the slice from the freezer and cut into even sized bars.
4. Dip each bar into the chocolate and coat evenly. Transfer to a lined baking tray. Coat each bar twice. Freeze the coated bars for 1 hour before consuming. Trim any excess chocolate if needed.
5. Keep bars stored in an air-tight container in the fridge.
