[ Recipe ] Mini Raw Chocolate fudge & raspberry cheesecakes




•1 cup raw organic cashews

• 2.5 tbs organic cocoa •Few drops natural vanilla essence
•2 tbs coconut oil (melted)
•1/3 cup coconut milk (full cream)
•3-4 tbs pure maple syrup
 •1/2 - 1 cup fresh organic raspberries 

🔅Method🔅

1️⃣Blend all ingredients except raspberries in a high speed blender for 4-5 mins (till very smooth and creamy), if you don't have one, a food processor will suffice.
2️⃣ pour mixture half way up into a silicone moulding tray or cup cake cups. Place a few raspberries in mixture. Pour remaining chocolate over top and freeze for a few hours to set!
