[ Recipe ] Vegan Poppyseed Apple Pie




Serves

 makes 1 pan with a diameter of 24 cm
Cooking Time: 30-35 minutes

INGREDIENTS

DOUGH
350g flour
180g buttery vegan spread
50 ml ice cold water
FILLING
2 very ripe apples, peeled
juice of 1/2 an orange
a pinch of baking powder
zest of 1/2 an organic lemon
1 tbsp cinnamon
1 tsp bourbon vanilla powder
2 tbsp coconut sugar
1 1/2 tbsp ground poppyseeds

INSTRUCTIONS

Start off with the dough. Therefore, cut the buttery vegan spread into little chunks (each one should be about 2 cm big) and put them into the freezer for about 5-10 min until solid but not frozen.

Put them on top of the flour/baking powder mix and create a crumbly dough using your hands by "crumbling" the vegan buttery spread into the flour. The outcome should resemble a super fine crumble made out of flour & the spread.

You could also freeze the whole block of the vegan spread and grate it into the flour so that you only have to combine both ingredients creating the same wnd product as the other method would.

Just note one important thing: DON'T EVER KNEAD THE DOUGH! You should really just crumble the flour and the spread with your fingers until fine crumbs remain.

Next one, add 50 ml of ice cold water and stir until a soft and even dough forms. Add more water if the dough's still too crumbly.

Pur the dough into the fridge and let it rest for about 20 minutes. After the time's over, take it out and divide it into 2 equal balls. Sprinkle the countertop with some flour to prevent the dough from sticking onto it and roll it out. It should be a circle about 3 cm thick. Repeat wuth the other ball. Always make sure to sprinkle with enough flour or otherwise they'll stick onto the surface.
